Quick & Easy Homemade Bread Recipe: Basic Bread Dough

We’ve crafted this section to help you discover volunteering projects or hosts keen to teach you the beautiful art of bread making.

Meanwhile, if you’re eager to try your hand at crafting homemade bread with a soft, honeycomb crumb and a tantalizingly fragrant crust, we’ve got the perfect recipe for you! It’s simple, fast, and wonderfully foolproof.

Quick, Simple, and Affordable Basic Bread Dough

All you need are four key ingredients:

  • Flour
  • Water
  • Yeast
  • Salt

You’ll also need a bowl for mixing and a couple of hours for the dough to rise. Once risen, fold and divide the dough into loaves, then bake immediately! You’ll be rewarded with a delicious and aromatic bread, baked right in your home oven. It remains soft for days and is freezer-friendly—truly worthy of the finest bakeries!

Procedure

Begin by combining the flour, sugar, and yeast in a large bowl. To activate the dry brewer’s yeast, don’t forget to add a pinch of sugar! (If using fresh yeast, dissolve it in a small portion of the total water).

Gradually incorporate room temperature water, starting with 370g. Add the remaining water as required by the dough, and finally, mix in the salt.

The result should be a soft, pliable dough. Once ready, dust the dough with a handful of flour.

Cover the bowl with cling wrap and let the dough rise at 28°C (ideally in an oven that was turned off a little while earlier) for approximately 2 to 3 hours.

Dividing and Rising the Dough

Next, divide the dough into individual loaves and allow them to rise in a 28°C oven, turned off recently, for about 1.5 hours. Your loaves should double in volume, becoming puffy and well-aerated. Remember, rising times can vary depending on ambient temperature and humidity, so adjustments may be necessary!

Baking Bread at Home

For those fortunate enough to own a wood-fired oven, bread baking can be a unique experience. However, anyone with an electric or gas oven can also achieve exceptional results by following these instructions.

Preheat your oven to 250°C. When it’s reached the desired temperature, place your tray of bread in the lower part of the oven, directly touching the base. Let it bake for approximately 12 minutes.

Then, relocate the tray to the middle of the oven and continue baking for an additional 5 to 6 minutes.

Finally, without opening the oven, reduce the temperature to 230°C and bake the bread for another 5 to 6 minutes until it’s golden brown.

For a lighter, aromatic crust that’s not overly crunchy, remove the bread now. If you prefer a crackling, nicely toasted crust, turn on the grill for the last 3 minutes and move the bread to the top of the oven.

Let your bread cool for at least 5 minutes before indulging—voilà, homemade bread that’s as delightful as (or even better than!) bakery-made bread. 😜

Storing Your Homemade Bread

Once your bread has completely cooled, seal it in a food bag to maintain its freshness. If left exposed for over 3 hours, it tends to harden just like classic bread. To keep it soft for several days, we recommend freezing it as soon as it has cooled. Once defrosted, it will taste as good as freshly
